Well, that’s the quick fix which is heading to UCC to satisfy my sweet cravings but when i’m really in the mood for cooking, i make my own.

sunday post: delicious

What a better way to describe delicious than tasting the best and my all-time favorite dessert.. PANNA COTTA. It is a traditional Italian custard which is usually served with fudge or fruit sauce topped with fresh slices of fruits.

I get my sugar high at Italianni’s whenever i crave for dessert because they have the best Panna Cotta with three delightful sauces to choose from.. mango, blueberry and honey with walnuts. Among the three sauces, mango is my ultimate favorite.

what’s for lunch?

It’s almost the end of the summer season as well as the summer vacation of the kids. The school year will open next week and i need to say bye-bye to waking up late and say hello to waking up early.

I am making the most of the kids’ summer vacation by preparing the best home-cooked meal that i could give them and here’s what i prepared for lunch today.


ceasar’s salad

For the dressing, here’s my super easy recipe. I just blend olive oil, 1 clove garlic (crushed), 1 coddled* egg, parmesan cheese, some salt to taste, about 2 tbsp. lemon juice and 1 tsp. mustard.

*coddled egg is slightly cooking egg for about 1 minute in boiling water which will give the dressing a creamier and smoother texture.

I season fish (cream dory) with salt and pepper, a bit of rosemary and parsley, slightly dipped both sides in flour and fry for about 3mins. each side. Arrange it on a baking pan, pour the lemon and butter sauce and bake covered with foil in the oven for about 15-20 minutes.

For the lemon butter sauce, here’s my easy recipe. In a pan, melt butter and add lemon juice. Let it simmer and add about half a cup of cream and some milk. I added about 1/3 of pork bouillon cube and cornstarch mixture to thicken the sauce then salt and pepper to taste.

Philippine mangoes are known all over the world for its fragrant sweetness and succulent texture. I just made a hedgehog (crisscross) cut on the flesh and turn it outward to serve.

happy holidays to all

We had an amazing Christmas celebration last December 25, 2011.  We had lots of food and goodies and the kids had fun.  Although my hubby had to leave before Christmas to work abroad, we made this day as exciting as possible and i’m sure he would have wanted us to be happy even if we’re celebrating it miles apart from each other.

oven-baked baby back ribs - a favorite dish by everyone

My oven-baked baby back ribs is always a favorite.  It’s often the most requested dish by everyone.  I marinated the ribs a day before.  I made use of the hickory flavored marinade combined with the regular bbq flavored marinade.  It gave the most delightful and smoky flavored ribs.  Yum!

I made 2 medium containers of lasagna.  I made used of oven ready lasagna sheets and it turned out to be just as great.

almond cupcakes for the kids

For my cupcakes, i ground up roasted almonds and added it to my batter.  I would have wanted to make a marshmallow icing to complement the cupcakes but i ran out of time, will surely be doing it the next time.  My almonds are courtesy of my sister who always make it a point to gift me with nuts everytime she comes home from Dubai.  She also gave me walnuts and that i would use in my next cupcake baking.

These goodies are from my brother who arrived from Switzerland.  He always give me swiss chocolates as well as those lovely sugar cubes.  I know these are all available locally but nothing beats gifts from a loved one who comes home from abroad.

This H&M tops fits me so well.  I love the print and its texture is so smooth on my skin.  I’m planning to wear it on our new year celebration.

The Roxy tops has that cute butterfly design on front.   Its very much wearable and i would love to wear it on my next trip to the mall.  Oh, it was also a gift from my sister.

I adore the heart design of those tiny trinkets adorning this silver bracelet.  In fact, i’ve already worn it last Christmas.
