Today is an epic day and it has got to be one of the busiest days of the year. For us mommies, this is the time to prepare and cook the dishes for the media noche. After all the merrymaking, after all the fireworks have been lit, after all the shouting and the jumping and the noise making as we welcome the new year, it is customary to share love, food and happiness during the midnight dinner with the family and the loved ones. This is the tradition of media noche.
As usual, i am tasked with the cooking of the most requested ribs. As of this moment, the baby back ribs are sitting in the hickory-BBQ marinade for quite a while and ready to be put in the oven a little later. I will also prepare some pork belly slices which i will just season simply with salt and pepper and i bet yah, this will taste so awesome and the secret is in the dipping sauce. For my own version of the dipping sauce, here’s my simple recipe.
- soy sauce
- salt and pepper
- cane or coconut vinegar (for its mild and distinct sweet taste)
- some sugar
- long chili also known as finger chili – finely sliced
- onions – finely diced
- garlic – finely minced
Just mix them all together, add more chili to adjust the spiciness or to your own liking and taste and you’re done. This dipping sauce will complement grilled pork and fish. This could also be used as a salad dressing for grilled eggplant.
